Baked Pancetta wrapped Asparagus

Last night we grilled chicken breast, and I decided to chef up asparagus wrapped w/ pancetta as a side.  The flavor combination turned out so delicious!!   These tasty asparagus could also be made ahead to pack in your child's lunch, or an on the go snack! Enjoy!

Serves 2-4

Ingredients:
2 Bundles Organic Asparagus

1/4 lb Pancetta thinly sliced

1/4c Coconut Oil - Melted

Sea Salt w/ Truffle  -  To Taste
Black Pepper - To Taste

Directions:

  • Turn oven onto 475F
  • Melt coconut oil in oven safe bowl for a couple of minutes
  • Toss Melted Coconut Oil with Asparagus, Sea Salt & Black Pepper

  • Wrap each asparagus w/ some pancetta

  • Toss in Oven and bake 10-20 min.  Checking every so often to ensure the asparagus & pancetta aren't over cooking.
  • Enjoy!  The finished product photo didn't turn out as good as I would have liked.  Trust me it was delicious!
