Serves 2-4
Ingredients:
2 Bundles Organic Asparagus
1/4 lb Pancetta thinly sliced
1/4c Coconut Oil - Melted
Sea Salt w/ Truffle - To Taste
Black Pepper - To Taste
Directions:
- Turn oven onto 475F
- Melt coconut oil in oven safe bowl for a couple of minutes
- Toss Melted Coconut Oil with Asparagus, Sea Salt & Black Pepper
- Wrap each asparagus w/ some pancetta
- Toss in Oven and bake 10-20 min. Checking every so often to ensure the asparagus & pancetta aren't over cooking.
- Enjoy! The finished product photo didn't turn out as good as I would have liked. Trust me it was delicious!
