Vegetable Broth/Stock

I don't make this type of broth as often anymore now that I am paleo and eat meat regularly, but I wanted to post for those who love a great veggie broth recipe.  Enjoy!

Ingredients:
2 Large Vidalia Onions - Chopped
8 Carrots - Chopped
8 Celery Stalks - Chopped
10 Garlic Cloves - Peeled
2T Nutritional Yeast
1/2T Celtic Sea Salt
1/2t Ground Ginger(optional)
1/2 T Italian Seasonings
2T  Granulated Kelp
3qts of Filtered Water

Directions:

  • Place all ingredients into crockpot and bring to boil over high heat
  • Reduce heat to low and simmer for 8-12 hrs
  • Let cool, strain veggies and compost the remains
  • Put into glass containers for later consumption.  If you plan to keep the broth for over 7 days freeze until ready to use.
  • Enjoy!
